1⁄2 cup coconut yogurt (sub other plant-based yogurt of choice) 2 tablespoons chia seeds
2 cups oats (rolled oats)
1⁄2 cup desiccated or flaked coconut
1 1⁄2 cups almond, oat or soy milk
1⁄2 teaspoon cinnamon
Knob of fresh ginger, peeled
2 cups frozen berries of choice, divided

Ingredients

Method

Preheat the oven to 350°F/180°C.

 

Linea a 9-inch x 11-inch baking pan.

 

Grate the ginger and mash the banana in a large bowl.

Add the chia seeds, yogurt, cinnamon, rolledoats, almondmilk, and half the berries.

 

Stir gently to pour into the baking pan.

Arrange the remaining frozen berries on to pan and bake for 30-35 minutes.

 

The oatmeal should be set in the center but still moist and spongy.

Cool 10 minutes then serve sliced, with extra coconut yogurt and berries.

The beans in this recipe might not be magical, but they taste just as good as the ones that grow into oversized beanstalks! Without all the pesky landscaping and giants. These garden vegetable wraps taste just like Peter Rabbit himself picked the vegetables bursting with flavor. Use your favorite vegetables, plant-based sauces and spreads to alter to your personal taste!

4-6 tablespoons olive oil

1 large onion, finely chopped

4 cloves garlic, finely chopped

1 teaspoon ground ginger

¼ teaspoon ground turmeric

½ teaspoon curry

1 cup chopped tomatoes

1 teaspoon sugar

1 teaspoon cumin powder

1 teaspoon paprika

2 tablespoons coconut cream

2 tablespoons chopped cilantro

Cooked rice

1⁄3 cup plant-based butter or margarine, plus extra for greasing
1⁄2 cup self-raising flour
1⁄3 cup ground almonds
1⁄3 cup cocoa powder
1⁄2 tsp baking powder
1⁄2 tsp baking soda
1 cup sugar
1 tsp vanilla extract
Edible flowers of choice; pansies,daisy, calendula, chive flowers, courgette/zucchini blooms, lavender, rose petals)

Method

 

 Before you start, place your choice of edible flowers between two sheet of parchment paper. Press down to stop them moving around and place a heavy skillet or stack of books on top to press. Leave the flowers to press while you make the brownie.

 Preheat the oven to 330F/170C. Grease and line a 20cm tin with baking parchment. Combine the flaxseed with 6 tbsp water and set aside for at least 5 mins.

Heat a saucepan over a medium-low heat and add 1 cup chocolate, the coffee and margarine with 1⁄4 cup water on a low heat. Mix until melted together then set aside.

Add the flour, almonds, cocoa, baking powder and salt in a bowl and whisk to remove any lumps. Using a hand whisk or beaters, mix the sugar into the melted chocolate mixture, and beat well until smooth and glossy.

Slowly stir the flour mixture and flaxseed into the chocolate.Combine well and spoon into the prepared tin.

Bake for 35-45 mins until cooked around edges and set in the center.When you remove the brownie from the oven, place a piece of baking paper over top and press down gently to flatten top as much as possible. Cool Completely.

Melt remaining 2 cups chocolate and pour over cooled brownie and let set.When almost set, place the flower delicately in your preferred pattern. Slice and serve.

1 tbsp instant yeast

1/3 cup margarine

10oz vegetable milk

1/4 cup sugar

1 tbsp salt

16oz white flour

The apple filling

1 tbsp margarine

2 medium apples, peeled and cut into cubes

2 tbsp brown sugar

1 tbsp ground cinnamon

1 tbsp flour

Glaze

1 cup icing sugar

1 tbsp vegetable milk

While the dough rests, make the filling.

Add the margarine and apples to a frying pan over medium heat until they begin to release their juice.

Add sugar and cinnamon.

After 5 min add the flour, cook for 1 more min and remove from the heat.

When the dough is ready, place it on a table to stretch it, you can help yourself by putting flour on the table and dough.

Place the apple mixture on top of the dough and begin rolling.

Cut the roll into 1.5 inches and set aside on a baking sheet lined with wax paper.

Preheat oven to 350°F

Let the rolls increase in size in a warm place.

Before entering the oven, with a brush spread vegetable milk on each roll, this will give it shine.

Bake for 25 minutes or until lightly golden.

For the glaze, add the vegetable milk to the sugar, it should be thick but spreadable

Decorate the cooled rolls with the glaze and enjoy.

1 tsp ground cumin

½ tsp ground turmeric

½ tsp ground cardamom

1 1/2 cup coconut cream, reserve a little for decoration

2 1/2 cups vegetable broth

Transfer to a blender, working in batches if necessary. Blend until smooth.
